The Warhammer ghouls really changed design wise over the years (https://whfb.lexicanum.com/wiki/Ghoul), remember finding the tubby ones looked jarring to the mental picture had of them as degenerated human cannibals, but they were fun to paint. Can’t get my head round the modern design skewered with bones, but they look interesting and amused by the AoS background as deluded “knights”.

You might have to go modern. Paul Muller's the go-to ghoul guy these days. Seen his work for Heresy Miniatures? He also did more, including a bunch of scary (ahem) 'ladies", for Bad Squiddo Games.And, if that's not enough for you, check out the dregs he did for Reaper Miniatures (grim).
Some really good designs here, the dog legs look off for something that would supposedly be human lineage, but would happily overlook that. ;)
 
Sadly, there's not much in the way of decent Oldhammer ghoul choices. A couple of Night Horrors & a bunch of AD&D licensed range ghoul & ghast variants. The AD&D stuff can be hard to find in sufficient numbers & pricey.

Personally I've not seen many ghoul sculpts I love - if I ever do make some, I'll probably mostly use Muller ones - but my absolute favourites that I want as many of as possible are the AD&D Wights from Citadel and Otherworld (now at Crooked Dice). Not wights in the same sense as Warhammer wights from 4th ed onwards (i.e. elite armoured skeletons), much more like ghouls, wizened half-naked people with wild hair and eyes.
